Bitter orange (Citrus x aurantium), a natural hybrid of the pomelo and mandarin, was cultivated in China more than 4,000 years ago before Arab traders carried it west to the Middle East and North Africa by the ninth and tenth centuries. The Moors planted it throughout Spain and Sicily, and the fruit became so identified with the city of Seville that it is still called the Seville orange, prized above all for the classic British marmalade its high pectin content produces. Its fragrant blossoms also yield neroli oil, a prized perfume ingredient named for the Italian princess said to have scented her gloves and bathwater with it.
