This plate depicts the Roseate Spoonbill (Platalea ajaja), painted by John James Audubon as Plate 321 of his monumental The Birds of America (1827-1838), one of the most celebrated works in the history of ornithological illustration. The bird's rose-pink plumage is entirely diet-derived, built up from carotenoid pigments in the shrimp, crabs, and other crustaceans it eats, much as a flamingo's colouring is. Audubon captures the spoonbill's signature flattened, spoon-shaped bill, which it sweeps side to side through shallow coastal water, snapping shut the instant sensitive nerve endings detect prey.
