Common thyme (Thymus vulgaris) is a low, woody-stemmed shrub native to the sun-baked hillsides of the western Mediterranean, particularly Spain and Italy. Its name comes from the Greek thymos, meaning 'to fumigate,' recalling its ancient use as temple incense and its associations with courage in Greek culture, while Egyptian embalmers rubbed the herb, alongside rosemary, into corpses for its preserving, purifying scent. Physicians such as Dioscorides and Pliny the Elder documented its medicinal uses, and Roman cooks flavoured cheeses and wine with its sharp, savoury leaves. Its tiny, aromatic foliage and drought-hardy habit made thyme a mainstay of Mediterranean kitchen gardens long before it became a stock subject of European herbals.
