Garden sage (Salvia officinalis) is a soft-leaved, aromatic shrub native to the northern Mediterranean coast, its genus name drawn from the Latin salvare, 'to save' or 'to heal.' The Romans called it herba sacra, the sacred herb, and harvested it with elaborate ceremony, deliberately avoiding iron blades, which were thought to spoil its virtue. Physicians from Dioscorides to Galen recommended it as a tonic and preservative, a reputation that carried into the Middle Ages, when Charlemagne ordered it grown in monastery gardens and a popular medical adage asked, 'Why should a man die while sage grows in his garden?' Its soft grey-green leaves and old reputation as a near-panacea made sage a constant presence in the herbals that catalogued Europe's medicinal plants.
